Teamwork is everything. Thanks to our well-established processes, up to 1,000 sides of pork and around 100 beef hindquarters are processed every night by our in-house meat processing department. Our team of professionals achieve this through routine, efficiency and coordinated hand-in-hand work. As the first to be certified to the new EC standard, we are proud to be the number 1 meat processing company in Hamburg.

Quality doesn´t happen by accident. If you play in the top league in meat market like we do, you have to be committed to quality, without exception. The only way to achieve this is through demanding internal and external quality procedures. That is why the permanent and rigorous inspection of production is just as important to us as meticulous coarse and fine cutting processes. We also pay particular attention to keeping the complete cooling chain uninterrupted at all times. This is how we achieve optimum shelf life and entirely satisfied customers.

Good things take time

This is also true for the elaborate ageing process our heifer meat undergoes. Striploins and Ribeye are aged on the bone for a week using a strictly controlled procedure with a consistent temperature and humidity. It is not until then that our meat specialities are removed from the bone. Then we allow our products to age some more in a vacuum. At the end of this combined ageing process, we have meat that is especially tender and juicy and that even our Argentinian business partners rave about.

As soon as we receive your order, we take rough cut raw goods and move them to the fine cutting area where they are processed directly into the products our customers require. Our optimum raw goods supply chain and short processing steps ensure absolute freshness, ensuring that we meet our customers’ high expectations.

Our exclusive heifer program is probably the tastiest proof of our meat expertise. The young, female cattle grow up under the best conditions in our region and develop a finely marbled meat with a high proportion of intramuscular fat by the time they are two years old.

The result: exceptionally tender, juicy meat with an intense beef flavor - the perfect basis for an outstanding steak. Labeled “matti's PREMIUM”, its quality will win over even the most discerning gourmets.
