Teamwork is everything. Thanks to our well-established processes, up to 1,000 sides of pork and around 100 Pistola hindquarters are processed every night by our in-house meat processing department. Such large amounts require us to work at a speed that can only be achieved with a lot of routine and coordinated hand-in-hand work. As the first meat processing company in Hamburg certified to the new EC standard we carry the number one with pride.

Quality doesn´t happen by accident. If you want to play in the top league on the meat market like we do, you have to keep your commitment to quality, without exception. That is why the permanent and rigorous inspection of production is just as important to us as meticulous rough and fine cutting processes. We also pay particular attention to keeping the cold chain uninterrupted at all times. This is how we achieve optimal shelf life and entirely satisfied customers.

Good things takes time

This is also true for the elaborate ageing process our heifer meat undergoes. Roast beef and entrecote are aged on the bone for a week using a strictly controlled procedure with a consistent temperature and humidity. It is not until then that our meat specialities are removed from the bone. Then we allow our products to age some more in a vacuum. At the end of this combined ageing process, we have meat that is especially tender and juicy and that even our Argentinian business partners rave about.

Perfect conditions for maximum freshness

As soon as we receive your order, our employees request the fine cutting of the required raw goods from rough cutting. Next they process the pieces into the product our customers require. Our optimal raw goods supply and short distances ensure absolute freshness and help us meet our customers’ high expectations.

Our exclusive heifer program is probably the tastiest proof of real meat expertise. The young, female cattle grow up under the best conditions in our region and develop a fine, considerable marbling and a high proportion of intramuscular fat by the time they are two years old.
